Caramelized Pork Tacos with mango salsa and chili mayo

ingredients:

Caramelized Pork Tacos Recipe:

  • 2 lbs boneless pork loins, cut into strips
  • oil
  • 1 T minced garlic
  • 1/2 onion, diced
  • 1 jalepano, seeded and diced
  • 2 T sweet chili sauce
  • 3T sugar
  • 3 T water

Salsa:

  • 1 pineapple, cut into small cubes
  • 1/2 red bell pepper (de-seeded and diced)
  • 1 jalapeno (de-seeded and diced)
  • 1/2 medium purple onion (diced)
  • 1 mango (diced)
  • 1/4 bunch of cilantro (chopped)
  • juice of 1 lime
  • salt to taste

Chili Mayo Sauce:

  • 1 cup mayo
  • 1/3 cup sriracha

Tacos:

  • Corn Tortillas
  • Cilantro, thinly chopped
  • Lime, sliced

instructions:

for the pork:

In a skillet drizzle down some oil and then add the minced garlic, onion and jalepano. Saute for a few minutes. Slice the pork loin and then add into the skillet. Cook until pork is no longer pink. While it is cooking add the sweet chili sauce. Then turn the heat up and add the sugar and water and caramelize the pork.

for the salsa:

Combine all ingredients and then serve on top of the tacos!
